Prashant Kaushik

Dr. Prashant Kaushik holds Adjunct Faculty positions at three universities and is also a genome data engineer in a private company. He holds a BS (Hons) in agriculture, a PG diploma in floriculture and landscaping, an MS in vegetable science, and an MBA in production and operations management. After obtaining a PhD in biotechnology from Universitat Politecnica de Valencia, Spain, Dr. Kaushik was a bioinformatician at Nagano University in Ueda, Japan and worked at Yokohama Ueki in Kikugawa City, Japan. Dr. Kaushik has published 150 SCI or SCI-E Q1, Q2, and Q3 research articles, and an equivalent number of non-indexed research publications. He has written six books and 14 book chapters. His research interests include molecular biology, plant breeding, genomics, and population genetics.

Root vegetables are the sections of underground plants that are harvested and consumed by humans for their nutritional value. They are found in a wide variety of plant species. Even though botany draws a distinction between real roots and non-roots, the term “root vegetable” refers to both kinds in the context of agriculture and cuisine, despite botany classifying genuine roots as separate from non-roots. Root vegetables are often storage organs that store energy in the form of carbohydrates. This book explores recent developments in root vegetable research against the background of current and impending environmental change.
